Fried Green Tomatoes
2 large firm, green tomatoes – sliced about 1/4 inch-1/2 inch thick – you should get about 10 slices from 2 tomatoes
1 cup All Purpose flour
2 tbsp Lawry’s Season Salt
1 tbsp milk
2 cups Italian Seasoned PANKO Bread Crums
1/2 cup grate Parmesan Cheese
1/4 cup canola oil
In a small bowl, mix flour and Lawry’s until combined. In another shallow bowl – like a pie plate – beat eggs and milk together until well combined. In another shallow bowl combine bread crumbs and Parmesan cheese.
Heat oil over medium-high heat. You’ll know the oil is ready when a small bit of bread crumbs sizzles when dropped into the pan. Dredge tomatoes in flour, then in egg mixture, then in bread crumbs. Fry in hot oil for about 2 minutes on each side. Drain on paper towels or cooling rack.
Serve hot or room temperature, and enjoy!
