Grandma Lu’s Pineapple Upside Down Cake
1 Yellow cake mix – Prepared as directed*
1 can (20 oz) pineapple rings – juice reserved
2 tbsp salted butter
1/3 cup brown sugar – lightly packed
8 Maraschino cherry halves
10 whole pecans
Prepare cake mix as directed on box *use pineapple juice in place of water. Heat a 12-inch round pan over low on the stove. Melt butter in bottom of pan and sprinkle with brown sugar. Place rings around pan, with 1 ring in the center. Place a cherry half cut side up in each pineapple hole. Arrange pecans in open spaces around pineapple.
Gently pour cake batter into pan. Bake at 350° for about 35 minutes, until center is firm and springs back when touched lightly.
Let cool for about 10 minutes and run a butter knife around edges. Invert onto platter and cool completely. Serve with Vanilla ice cream, if desired.
