Grown Up Ham & Egg Sandwich

1 hard boiled egg
2 slices leftover ham
1/2 cup arugula
1 tsp olive oil
1 tsp lemon juice
good mayo
Salt & Pepper
2 slices crusty french bread

On a flat skillet, heat ham over medium heat, until browned and slightly grilled on both sides. Remove to a plate. Place bread on pan and toast both side. Meanwhile, slice egg into slices – you want about 6/8 slices of egg.  

Slather one side of the bread with mayo and top with one ham slice first, then 3/4 slices of egg. Dress arugula with olive oil and lemon juice. Sprinkle with salt & pepper. ENJOY!
