Chocolate Peanut Butter Pie

For the crust:
1 1/2 sleeves Chocolate Graham Crackers
1/3 cup semi sweet chocolate chips
6 tbsp butter, melted

For the Filling
8oz brick cream cheese
1/3 cup powdered sugar
1 1/2 cups creamy peanut butter
1/4 cup heavy whipping cream
1 tbsp vanilla

For the Ganache
1/2 cup heavy whipping cream
Remaining chocolate chips
1/2 cup creamy peanut butter
1 tbsp butter
Remove the collar from a 9″ spring form pan and place a piece of parchment paper on the bottom, replace and tighten collar, set aside.

Preheat oven to 375°. In a large food processor, add chocolate graham crackers and chocolate chips. Process on high speed until well crumbled and incoporated. Using the pour spout, process on low speed and slowly stream in butter. Remove processing bowl from base and pour crumbs into prepared spring form pan. Using your hands, spread the crumbs evenly along the bottom and side of the pan. Bake in preheated oven for 10-12 minutes. Remove and set aside.

While the crust is baking, heat 1/2 cup cream in a medium sauce pan over medium-high heat until gently simmering. Reduce heat to low and add chocolate chips, stirring constantly. Once melted, remove from heat and add the butter and peanut butter. Whisk constantly until mixture is smooth and butter and peanut butter are completely incorporated.

Remove crust from oven and let cool for about 5 minutes. Pour 1/2 the chocolate ganache over the crust, and spread evenly. Place pan in the freezer for 10-15 minutes.

Wipe the processor bowl with a paper towel to remove excess crumbs. Replace on the base and add cream cheese and powdered sugar. Process on high speed until combined. Then, add peanut butter, cream, and vanilla until well combined and mixture is smooth. Remove crust from freezer. Spread entire peanut butter mixture over chocolate crust. Drizzle remaining ganache over the top of the peanut butter mixture. Cover with plastic wrap and place in freezer for at least 3 hours. Remove from freezer about 20 minutes before serving.

Remove collar from the pans, and slide the parchment paper onto serving platter. Enjoy!
