Dad's Quicky Enchilada Gravy


1-28 oz. can Las Palmas Enchilada Sauce
1-26 oz. can Cream of Mushroom (or Chicken)Soup
1-14 1/2 oz. can Chicken Broth
2-4 Tablespoons UNSALTED Chili Powder
1-2 Teaspoons Garlic Powder


In large pot, empty Enchilada Sauce and heat. 
Add Cream of Mushroom or Chicken soup and whisk together. 
Add Chili Powder and Chicken Broth whisk together and bring to boil. 

Now, we're going to turn this into a silken spicy gravy! 

To 1/2 Cup of WARM water, add 2 tablespoons flour. 
Whisk all together or if you have a Bullet Blender or Blender, blend it all together. 
Add a little at a time to the sauce in the pot while constantly whisking till it gets to the consistancy of gravy. 
You can add more of the flour/water mixture to thicken it more if you want.

I use this Gravy for Enchiladas, Chili Colorado and also Chicken Mole.

For Enchiladas you'll need:

Left over Turkey, Chicken or Beef
Grated Jack Cheese
Sliced or Chopped Olives
Tortillas.  I like Corn Tortillas but also use Flour as a change.

Prepare casserole dish by spraying with Pam. 
Then add a ladle or two of gravy to coat bottom. 
Shred Meat add a couple of ladles of Gravy to Meat. 
Dip tortillas in Warm Gravy to soften them stacking on plate.

Assemble Enchiladas by adding a couple of tablespoons to the tortilla, sprinkle in some of the olives and top with a tablespoon of cheese. 
Roll and place into cassarole dish.  Fill pan. 
When full, ladle a couple of ladles over Enchiladas. 
Sprinkle with Cheese. 
Bake in a 375 oven 15 minutes to melt cheese and heat everything through.

For Quicky Chili Colorado:

Cut Cooked Beef into chunks. 
Add to pot and add a bit of water and heat. 
Add ladles of Gravy to pot till you get the desired consistancy of beef to sauce.
Serve with Flour Tortillas.

For Quicky Chicken Mole':

Place pieces of Fried Chicken (or leftover baked Chicken cut into pieces) into pot. 
Add a bit of water and heat. 
Add ladles of Gravy and simmer together.
Serve with Spanish Rice.
